Almond Cake

Take away the powdered sugar and the berries and we’ll be the first to admit that this almond cake is a not much of a looker. When baking, the middle puffs up beautifully in an almond paste cloud. Afterwards, it sinks dramatically creating a dense buttery, almond-y center. While this is hands down the best part of the cake (in our opinion) it’s not that cute. We hope you’ll give it a try anyway because this cake is for keeps. It’s great the day of baking but it truly shines a few days ( and up to a week) after baking. (If it lasts that long.)
